Of all the fish finning around in Texas waters, none carry the mystique of the lowly catfish.
Big, little or medium-sized, whiskered fish hold a sacred spot in the heart of many Texas anglers, too. In fact, catfish rank No. 2 among freshwater sport fish in terms of angling popularity statewide. The only fish with more followers is the largemouth bass. One of the main reasons catfish rank so high on the hit lists of fishin’ Texans is they are so tasty in the skillet. Or at least that is what the numbers show.
I’ve seen figures that indicate Texans consume roughly 109 million pounds of farm grown catfish processed and sold in American restaurants and markets each year.
